This Mediterranean salad offers a new twist on the traditional Greek pasta salad. By simply switching out pasta with farro, this party favorite becomes a healthy dish without compromising flavor. This recipe will easily serve 8-10 as a party side dish.

Ingredients
1cucumber
4ozfeta cheese
1pinttomatoes
2Tbspchopped parsley
2cupsfarro
1cupolive oil vinaigrette
Instructions
Halve cherry tomatoes
Chop cucumbers
Chop parsley
Set chopped vegetables and parsley aside while preparing farro.
To prepare farro, add 2 cups farro to 4 cups boiling water.
Simmer 20-25 minutes.
Drain farro and place in large bowl.
Toss farro with one cup of your favorite prepared olive oil vinaigrette.
Add tomatoes, cucumber, parsley and feta cheese.
Toss gently and serve.
Notes
Test the farro at 20 minutes. Do not overcook or the farro will be mushy. Remove from heat and drain when the farro is soft but al dente. The texture should be slightly chewy.
